Grains - why not on Paleo?
Under the Paleo diet, we don’t just exclude gluten. We exclude the entire grain group, so it’s not just excluding wheat and rye that contains gluten, it’s also rice, barley, corn, etc. ALL grains.
Why? Gluten is not the only culprit cause inflammation and damage in our bodies. Amylase trypsin inhibitor (ATI), similar to gluten, also causes chronic inflammation and damages your intestinal lining. ATIs may also contribute to non-celiac gluten sensitivity.
The other thing about them is they contain phytic acid, which prevents you from absorbing nutrients. So, yes, wholegrains contain vitamin B and many other good things, but, at the end of the day, can you absorb them?
